Adjust rack to top position and preheat oven to #oven{} at 450 degrees. Wash and dry all produce. Place @panko breadcrumbs{1%cup} in a #gallon-size zip-close bag{} and season with @fry seasoning{2%tbsp}, @salt{}, @black pepper{} (we used 1 tsp salt; use 2 tsp for 4 servings).

Place @sour cream{4%tbsp} in a #medium bowl{}; add @pork cutlets{24%oz} and turn to evenly coat. Place coated pork into bag with panko and seal to close. Shake until pork is evenly coated. TIP: You may need to move cutlets around in bag, pressing with your hands, to spread out panko and make it stick.

Mince @garlic{2%clove}. Halve, core, and thinly slice @FirstFruits Opal apple{2%unit} into half-moons. Thinly slice @celery{5%ounce} into small pieces. Cut @lemon{2%unit} into wedges. Halve @ciabatta bread{2%unit} (as if you were making a sandwich).

Heat a ¼-inch layer of @vegetable oil{} in a #large pan{} over medium-high heat until a pinch of panko sizzles when added. Remove coated pork from bag, discarding any excess panko, and add to pan. Cook until breading is golden brown and pork is cooked through ~{3%minutes} per side (for 4 servings, cook in batches). Transfer to a #baking sheet{} lined with paper towels.

Meanwhile, in a #small microwavesafe bowl{}, combine minced garlic and @butter{6%tbsp}. Microwave until melted, ~{30%seconds}. Place ciabatta halves cut sides up on a #baking sheet{} and drizzle with garlic butter. Toast on top rack until golden brown ~{5%minutes}. Halve on a diagonal to create triangles.

While ciabatta toasts, in a second medium bowl, toss together @arugula{4%ounce}, @sunflower seeds{2%ounce}, sliced apple, celery, 1 tbsp @extra-virgin olive oil{2%tbsp}, and a squeeze of lemon juice. Season with salt and pepper. Divide salad, pork, and ciabatta between plates. Serve with remaining lemon wedges on the side.
